Aw, Shucks! Business Is Booming!

Georgia’s oyster season reopens October 1, but the industry coming back to the coast looks very different from the one that once filled canneries. This version is being built with hatcheries, cages, research and tighter food-safety rules.

From Boatloads to Baby Oysters

Georgia once had serious oyster muscle. In 1908, the state led the nation in oyster landings, much of it feeding the canning industry. Overharvesting and other pressures eventually sent populations downward, and the old model never really returned.

What is growing now is more deliberate.

At UGA Marine Extension and Georgia Sea Grant’s aquaculture program, attention has shifted toward farm-raised oysters destined for the half-shell market. The Shellfish Research Lab on Skidaway Island produces millions of spat, or baby oysters, each year. Growers then raise them in cages into individual, market-size oysters with the uniform shape restaurants prefer.

That system helps explain why this industry behaves more like farming than traditional wild harvest. Georgia legalized commercial oyster farming in coastal waters in 2019, and the state’s oyster aquaculture story has since become a mix of biology, equipment, permitting and market demand.

The calendar is changing, too. Georgia DNR’s 2026 shellfish closure notice keeps recreational and commercial oyster harvesting closed from June 1 until 30 minutes before sunrise October 1 to meet Vibrio-control requirements. But qualifying operators on subtidal oyster farms can now petition for permission to harvest farmed oysters during the otherwise closed season if they meet strict handling and operating rules.

For growers, that potentially means something the old seasonal industry never had: a path toward serving customers beyond the traditional cool-weather window.

The Next Crop Starts in the Lab

Two UGA-supported research projects beginning in 2026 show where the business may go next.

One will study whether oyster-farming gear provides useful habitat for commercially and ecologically important fish. Another will test algae-based filtration systems in hatcheries, where algae could remove excess nutrients, increase oxygen, reduce harmful microbes and then be reused as supplemental oyster feed.

If the system works as hoped, it could improve oyster growth and survival while reducing some production costs. That matters in a young industry where every improvement in efficiency can make expansion a little more realistic.

Georgia’s oyster comeback, then, is not really a return to the past. The state once measured production by the boatload. Today, the future is being built one carefully raised shell at a time.
